The right land and the right method

What makes our tomatoes truly special is not only the geographical area and the quality of our volcanic soil, but the cultivation method used Nolano she has been a teacher for 60 years.

The five phases of the cultivation of San Marzano DOP

1.

Seed selection

To encourage genetic improvement, we select from millions of seeds only those deriving from the fruits of strong and vigorous plants. The seeds are obtained from San Marzano plants that have distinguished themselves during the various vegetative phases and have produced berries with a high quality standard. The nursery takes care of sowing in polystyrene containers which, floating on the water, accompany the fragile plant for about 1 month.

The transplant

When the seed has now grown into a sprout and the plant is robust enough, the transplanting phase takes place. We delicately place each individual plant in its furrow and wrap it with soft soil, so it is ready to begin its productive life thanks to the richness of the nutritional properties characteristic of our territory.

Plant binding

When the plant exceeds 30 cm in height and the stem begins to bend under the weight of the vegetation, we place wooden poles between the rows about two meters away from each other. To these we tie a string of twine whose edges are positioned so as to offer support to the plant. Every two weeks we carry out new tyings to accompany the growth in height of the San Marzano plant, until it reaches approximately two metres.

Collection

Starting from the second half of July, the tomatoes located in the lower part of the plant (the so-called first stage) are about to reach the perfect level of ripeness: thus we begin the first harvest. This phase lasts for approximately 10-15 days. Once the fruits of the first stage are finished, when the second is also now ripe, we begin the second harvest. This process is repeated approximately 4 times until all the tomatoes reach complete ripeness.

The transformation

We process the tomatoes a few kilometers away from the harvesting fields. This choice guarantees that the fresh tomato is transformed in the shortest possible time so that all the properties of the fruit remain unaltered. To do this, we rely on specialized laboratories, equipped with technology intended exclusively for the transformation of San Marzano PDO.
